Popping Up at Water Bear Bar: A WCA Benefit
Craft cocktail watering hole Water Bear Bar recently opened in downtown Boise on the corner of Ninth and Jefferson streets. It created a holiday-themed cocktail menu with 10 new drinks like a Tiki toddy and a holiday punch, as well as decoratable gingerbread cookies; but patrons can still order items off the regular menu. The pop-up will run from Monday, Dec. 16 to Saturday, Dec. 21 and the bar will donate proceeds from the cookies to the WCA the entire time.

Owner-bartenders Kylie North and Laura Keeler have created a unique cocktail lounge with spacious and comfortable feel, featuring leather seats and a wooden bar—and a few quirky details like colorful Dino mugs, a bespectacled taxidermy coyote and a long shuffleboard table give it novelty and charm. plants hang from the ceiling and large windows lend an earthen, spacious feel.

“Radical accessibility is our mantra,” she says. “That’s where the water bear comes in. He can thrive in just about any situation. Let’s just do a few things really well. Let’s just try to say ‘yes,’ and part of that in hospitality means just having a little bit of food with your alcohol. And, ‘Yes, we want you to stay. This seat is comfortable. It’s soft and cushiony.’ We’ve worked on the acoustics in the room. It’s like the bar/solarium/library/lounge that everybody wants in their home but none of us can actually afford.”

“It’s really authentic to who we are. We thought, ‘let’s make the bar that should exist in our home’,” North said of the concept. “We began thinking about this three to four years ago .”
Keeler, North’s wife, said their time working in bars around the region fueled the idea.
